Chicken with Scallions and Sugar Snap Peas

Ingredients

2 boneless, skinless chicken breasts cut into approximately 1″ cubes

1/4 cup flour

1/2 tsp paprika

1/2 tsp ground ginger

Cilantro paste

Lemongrass paste

1 cup Sugar Snap Peas

3 Scallions (Green Onions, root end removed)

2 tbsp vegetable oil, plus 1 tbsp

3 tbsp butter, plus 1 tbsp

Method

In a large bowl mix flour with dried spices. I used paprika and ginger but use your favourites!

Prepare green onions, cilantro paste and lemongrass paste. I can get these pastes in a tube at my local grocery store. If you can’t find them in a paste form, use fresh cilantro stems, saving the leaves for garnish later, and prepare your own lemongrass by removing the tough woody end, bashing the lemongrass with the side of your knife then after dicing into small bits mash them in a mortar and pestle until a somewhat smooth paste.

Put the oil and butter into a frying pan and heat on medium high. When it is sizzling add the chicken pieces and cook 10 minutes, stirring frequently until golden brown on all sides.

Remove the chicken from the pan and set aside. Add 1 tbsp oil to the pan and 1 tbsp butter. Now add the two pastes and stir fry until golden and fragrant. Add in the onions and peas and stir fry for 5 minutes.

Once the peas are cooked to tender crisp, add the chicken back to the pan and give everything a good stir. Serve with prepared rice and some iceburg lettuce with a simple dressing of lemon juice, vegetable oil and salt.

Sing to the Lord!

Isn’t it wonderful when we gather together and sing praises to the Lord? There is something eternally sweet about recognizing and worshipping the name of our Lord Jesus Christ. Throughout Scripture we see God protecting His name. He does not allow it to be maligned in any way. I think He must take great delight in hearing us praise His name. Romans 15:9 quotes 2 Samuel 22:50, “Therefore I will give thanks to You, O Lord, among the Gentiles, And sing praises to Your name,” NKJV. I am so thankful those first century Jewish believers took the name of Jesus to the whole world. As a Gentile I am so full of joy to be grafted in because I am a believer in the Lord Jesus Christ and His completed work at Calvary! It is also good and wonderful to praise my Lord in song even when I am by myself. It is a fantastic way to lift the spirits and I often find a certain melody or chorus will stay in my thoughts for the rest of the day. The last few psalms echo and reecho with the refrain to “Praise Him!” So as you go about preparing this supper, praise your Lord. Rejoice in His presence with you and revel in the opportunity to praise His name! Praise the LORD!
